Ingredients

  • 500 g blanched almonds
  • 350 g caster sugar
  • 4 eggs + 1 egg white
  • 1 lemon zest
  • To sandwich the Baisers together, mix 1 egg yolk with 1 tbsp icing sugar and a drop of vanilla extract.

Gently heat the finely chopped almonds with the sugar over a low flame, stirring with a wooden spoon. Remove from the heat and fold in the stiffly beaten egg whites. The mixture should form a dough that is not too light. Coat your hands in lightly beaten egg white and shape the dough into small balls. Place them on a baking tray lined with baking parchment. Preheat the oven to gas mark 4 or 130 °C and bake the Baisers for 10 minutes. Once cooled, sandwich them together in pairs and place them in paper cases.
