Walnut and Cinnamon Cake

- 6 eggs
- 3 glasses of sugar
- 2 glasses of oil
- 2 yogurts
- 2 sachets of baking powder
- 6 glasses of flour
- a handful of crushed walnuts
- 1 tsp of cinnamon
Separate the egg yolks from the whites. Beat the yolks with the sugar until the mixture turns pale. Add the yogurts, oil, baking powder and flour, and continue beating. Beat the egg whites until stiff peaks form, then gently fold them into the first mixture using a spatula, lifting the batter as you go. Add the walnuts and cinnamon.
Pour the batter into cake tins lined with parchment paper, or aluminium foil greased with oil. Preheat the oven to 180°, place in the oven and bake for 15 minutes, then lower the temperature to 160° and bake for a further 20 minutes. Keep an eye on the baking. The cake is ready when a skewer inserted into the centre comes out clean.
Variation:
Marble Chocolate Cake:
Instead of walnuts and cinnamon, you can use 2 tbsp of unsweetened Van Houten cocoa powder. Set aside 1/3 of the base batter in a separate bowl and stir in the sifted cocoa. Mix well. Then pour plain batter into the tins, add a little cocoa batter in a swirling ribbon, then cover again with plain batter.
