Liver Cigares

Ingredients for 50 Cigares

  • 500 g heifer liver
  • 250 g minced beef
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp hot red chilli pepper (optional, but so good!)
  • 1 tsp salt
  • 2 packets of bricks pastry leaves

Grill the liver, rinse it and cut it into pieces. In a frying pan, cook the minced beef with 1/2 glass of water for 10 minutes. Add the liver, salt and spices and cook for a further 5 minutes. Chop everything together and knead well. Shape into small rolls the size of a finger and roll the Cigares using a quarter of a bricks leaf. Seal the edges with egg white. Deep-fry in sunflower oil and serve hot.
