Couscous with butter
Mamie Sol's MainsIn a large bowl, place 500 g of medium Couscous. Rinse it with cold water. Remove the excess water, add 1 tsp of salt, 1 tbsp of oil and let it rest for 1 hour. Stir the grains regularly by rolling them between your hands to remove any lumps. Cover the bowl with cling film and microwave for 8 minutes on full power.
Immediately pour a glass of cold water little by little over the hot Couscous, fluffing the grains as you go.
Then add 50 g of butter, or more if you like.
Serve with raisins and fried almonds (blanch the almonds and fry them in a small saucepan of hot oil). Add sugar and cinnamon.
For Igal who cannot wait for the Couscous to rest for an hour, you can pour boiling water directly over the grains until they are just barely covered. 1 tsp salt, 1 tbsp oil and stir with a fork to fluff the grains. No need for the microwave in this case. It's ready!!!!
