Almond Crescents

Ingredients

  • 300 g blanched almonds
  • 300 g sugar
  • 2 tbsp flour
  • 2 egg whites
  • 1 grated lemon (zest)
  • 50 g flaked almonds

Blend the blanched almonds with the sugar. Pour into a mixing bowl, add the flour, lemon zest and one egg white. Work the dough well, adding a little more egg white if necessary. Shape into small sticks the size of a little finger, roll them in the beaten egg white and the flaked almonds. Shape into crescents. Place them on a baking tray lined with baking paper. Preheat the oven to 160 °, place in the oven and bake for 10 to 15 minutes. Watch the baking closely — they should not take on too much colour. Leave to cool and store in an airtight container.
