Meringues

- 150 g egg whites
- 150 g caster sugar
- 150 g icing sugar
Beat the egg whites with a pinch of salt at low speed. Add the caster sugar little by little, increasing the speed for the last third of the caster sugar. Fold in the icing sugar using a spatula, gently lifting the mixture.
On a baking tray lined with baking parchment, form mounds using a spoon or a piping bag.
Bake in an oven preheated to 90 °C. If the meringues are large, bake for 2 hours at 90 °C. If they are small, bake for 1 hour 30 minutes at 90 °C. Fan heat, middle rack of the oven.
