Grandma Lina's Passover Msoki
Other MainsIngredients for 10 people:
- 1.5 kg lamb shank
- 2 onions, diced
- 3 tbsp oil
In a pressure cooker, brown the meat and onions in the oil. Cover generously with water, close the pressure cooker and cook for 1 hour.
Remove the meat and add the following vegetables, cut into small dice, along with enough water to cover.
- 3 carrots
- 3 turnips
- 2 leeks
- 1 celery heart
- 1 courgette
- 1 fennel bulb
- 4 or 5 artichoke hearts
- 500 g spinach
- 500 g peas
- 500 g fresh or frozen broad beans (left whole)
- 1/2 bunch chopped parsley
- 1/2 bunch chopped coriander
- a few leaves of fresh mint, chopped
- 2 cloves of garlic, crushed
- salt, pepper, 1 tsp allspice and nutmeg
Simmer over a low heat for 1 hour 30 minutes.
Crumble 4 or 5 round unleavened water crackers and add them to the soup. Cook until the liquid is absorbed and the crackers have softened.
Slice the shank and add it to the Msoki.
