Grandma Lina's Passover Msoki

Ingredients for 10 people:

  • 1.5 kg lamb shank
  • 2 onions, diced
  • 3 tbsp oil

In a pressure cooker, brown the meat and onions in the oil. Cover generously with water, close the pressure cooker and cook for 1 hour.

Remove the meat and add the following vegetables, cut into small dice, along with enough water to cover.

  • 3 carrots
  • 3 turnips
  • 2 leeks
  • 1 celery heart
  • 1 courgette
  • 1 fennel bulb
  • 4 or 5 artichoke hearts
  • 500 g spinach
  • 500 g peas
  • 500 g fresh or frozen broad beans (left whole)
  • 1/2 bunch chopped parsley
  • 1/2 bunch chopped coriander
  • a few leaves of fresh mint, chopped
  • 2 cloves of garlic, crushed
  • salt, pepper, 1 tsp allspice and nutmeg

Simmer over a low heat for 1 hour 30 minutes.

Crumble 4 or 5 round unleavened water crackers and add them to the soup. Cook until the liquid is absorbed and the crackers have softened.

Slice the shank and add it to the Msoki.
