Cooked Salad

Mamie Sol's Starters

Ingredients:

  • 1 kg crushed tomatoes
  • 4 green peppers
  • 2 red peppers
  • 2 garlic cloves
  • 4-5 tbsp oil
  • 2 sugar cubes
  • salt, pepper

Place the peppers in the oven under the grill, turning them regularly. Remove them, peel them, deseed them and cut them into strips. In a frying pan, pour in the tomatoes, add the garlic, and let reduce. Once the tomatoes have reduced to a purée, crush the garlic, then add the peppers, oil, salt, sugar and pepper. Let the mixture cook down for a good half-hour, adding a little oil if necessary.
