Aubergine salad

Ingredients

  • 3 aubergines
  • 1 sweet red pepper
  • 1 clove of garlic
  • 4 to 5 tbsp sunflower oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 lemon
  • salt
  • 1 pinch of hot red chilli (optional)

Grill the aubergines in the oven on the grill setting, turning them regularly. Peel the aubergines, then squeeze them between your hands to remove all the juice. Use a meat grinder to mince the raw red pepper. Drain the pepper and continue to mince the aubergines. Add the crushed garlic, oil, lemon juice, spices and salt, and optionally the red chilli. Taste, and adjust the seasoning if necessary.
