Orange Salad

Mamie Sol's Starters

Ingredients:

  • 2 or 3 large oranges
  • 100 g pitted Greek-style black olives
  • 1/2 tsp ground mild red chilli pepper
  • a pinch of cayenne pepper (optional)
  • 1 clove of garlic
  • 2 tbsp sunflower oil
  • a pinch of salt


Peel the oranges down to the flesh, cut them into small pieces and remove the seeds. Place them in a bowl with the pitted olives, garlic crushed through a garlic press, salt, chilli and oil. Serve well chilled.
