Tomato salad with argan oil

Mamie Sol's Starters

Ingredients:

  • 4 ripe tomatoes
  • 1 celery stalk
  • 2 small fresh spring onions
  • 1 tbsp capers
  • ¼ mild or hot green pepper
  • 1 small preserved lemon
  • 2 tbsp argan oil
  • 1 dash of lemon juice


Peel the raw tomatoes, dice them, and place them in a bowl. Add the celery, onion, and pepper, also diced, then the capers. Season with argan oil (or sunflower oil), lemon juice (or white vinegar), and a pinch of salt and pepper.
