Fresh Dill-Marinated Salmon

- 1 thick skinless fresh salmon fillet (approximately 1.5 kg)
- 200 g coarse salt
- 180 g sugar
- 1 tbsp whole peppercorns
- 1 bunch of dill
- 1 drizzle of olive oil.
Mix the sugar, salt, pepper and a few sprigs of dill together. Pour half of this mixture into a rectangular dish, lay the salmon on top and cover it with the remaining salt and sugar mixture. Cover with cling film and leave to marinate for 3 days, turning the salmon over regularly. Rinse the salmon several times under water, pat it dry and slice it into thin strips. Place it in a salad bowl with a drizzle of olive oil and the finely chopped dill. Leave to rest for a few hours in the refrigerator.
