Chickpea Soup

Mamie Sol's Mains

Ingredients:

  • 500 g dried chickpeas
  • 2 cloves of garlic
  • 1/2 bunch of coriander
  • 1/4 glass of oil
  • salt, pepper
  • marrow bone (optional)

In a large bowl, place the chickpeas with 2 tablespoons of washing soda crystals (available at a pharmacy or hardware store) and cover with boiling water. Leave to soak for one hour with the bowl covered. Then rub the chickpeas between your hands to remove the skins. Rinse under cold running water as you go.

In a pressure cooker, place the peeled chickpeas and the remaining ingredients. Cover with water (approximately 1.5 litres).

Cook for 30 minutes from the moment the pressure valve begins to hiss.

Blend everything together, adjust seasoning with salt and pepper. Add freshly chopped coriander.
